The experiments reported in this research paper examine the potential of digestion using acidic enzymes Protease A and Protease M to selectively hydrolyse \textgreeka-lactalbumin (\textgreeka-La) whilst leaving \textgreekb-lactoglobulin (\textgreekb-Lg) relatively intact.
