In this thesis, an image analysis, called protein network analysis (PNA), was developed, which allows quantifying the complex microstructure of gluten networks in wheat dough comprehensively. Moreover, the relationship to mechanical dough properties can be determined in a novel way. By means of statistical analyses, predictive formulas as well as seven network types were identified, which offer new possibilities for elucidating and predicting wheat dough functionalities and product quality in future studies.
