In summary, a visual online detection system to investigate changes in starch granules on a microstructural scale during heating was developed. This in situ system monitors the structural changes of starch granules such as starch gelatinization with the advantage of being unaffected by secondary factors. Correlation between CLSM and DSC were used to investigate the onset of starch gelatinization of complex high viscose products. This knowledge is fundamental for the process optimization and serves as a useful instrument for product development.
