The concentrations and enantiomeric compositions of 2-alkyl esters in purple (
Passiflora edulis Sims) and yellow (
Passiflora edulis f.
flavicarpa) passionfruits were determined. The acetates, butanoates, hexanoates and octanoates of the odd-numbered secondary alcohols 2-pentanol, 2-heptanol and 2-nonanol were isolated by means of simultaneous distillation-extraction (SDE) and identified and quantified using capillary gas chromatography-mass spectrometry (GC/MS). Enantiodifferentiations of the homologues esters and secondary alcohols were performed via multidimensional gas chromatography (MDGC) using a modified cyclodextrin phase. Based on the findings of an enzyme screening and synthesis and hydrolysis reactions, a procedure was developed for the preparation of the passionfruit-typical 2-alkyl esters in a preparative scale. Sensory evaluations of the obtained ester enantiomers were performed.
