Intake estimation plays a central role in the course of the safety evaluation of flavouring substances. Data regarding occurrence and concentrations of five monoterpenes were elaborated in ‘Earl Grey’ teas from member states of the European Union and subjected to statistical analyses. In addition, transfer rates of the flavouring substances upon hot water infusions were determined. These data sets were essential to calculate the exposure to flavouring substances via consumption of tea beverages.
