Potato protein unfolding, aggregation, and gelation were investigated. The results were used to develop novel structures from whey and potato protein solutions with and without the presence of ethanol. The feasibility to produce aerogels from these systems was shown and allowed for unique insights into the microstructure-formation. Differences in gelation behavior between whey and potato proteins could be correlated with changes in protein interactions. A mechanistic description between protein structure, protein interactions, and rheological properties and could be established.
