Shigella and Salmonella are main causes of foodborne illnesses and intoxications. Because of their drying-resistance they a food safety problem during production. Therefore survival and drying stress of those pathogenic bacteria were characterized. A dependency of survival, cell density, and carrier medium was shown. Furthermore cells up-regulated the production of general stress-, energy pathway-, and membrane-proteins. For Shigella a over-expression of trehalose pathway proteins was shown, which was confirmed by trehalose content analysis.
