Oxygen is one factor causing deterioration of beverages after filling. Especially, the replacement of glass to plastic bottles implicates shelf life problems. Vulnerable ingredients are essential fatty acids, proteins, natural and synthetic flavors, dyestuffs as well as the vitamins A, C and E. Diffusivity, solubility and permeability of the packaging material as well as the mass transfer constants at phase interfaces has been analyzed. The stationary and transient mass transfer of oxygen through plastic bottles and closures with simultaneous reaction with the beverage has been described by means of analytical and numerical methods. Thus the applicability of plastic bottles and closures to different beverages can be estimated more detailed.
