In this thesis we analyze the influence of high hydrostatic pressure on arthropod-hemocyanins and casein-micelles. Our aim is to modify the molecular interactions within the protein complexes. Moreover, we identify and characterize the association and dissociation mechanisms.To achieve this, we conduct light scattering measurements under high pressure and AFM-measurements at ambient pressure. Furthermore, we develop thermodynamic models to estimate the dissociation volumes and energies of the protein complexes.
