Examined are important competitive factors and structure of the value added chain. Production costs are determined applying full cost calculations.
According to this, structures have developed on all stages of the value added chain in Denmark which allow utilization of substantial degression, specialization and integration effects. Initiatives in the areas of quality assurance and food safety support the customer-oriented strategy. In Bavaria only the beginnings of a Supply Chain Management system, with pig meat value added chain organized on all levels, are present. The system therefore offers great potential for reducing production costs and increasing competitive ability.
