- Die Quantifizierung des Folatgehaltes über LC-MS/MS wurde mit der weit verbreiteten Methode des mikrobiologischen Assays verglichen und Ursachen für abweichende Ergebnisse ermittelt. Unter Berücksichtigung der sich daraus ergebenden Schlussfolgerungen konnten vergleichbare Ergebnisse erzielt werden. - Translated abstract:
- The quantification of the folate content via LC-MS / MS was compared with the widely used method of the microbiological assay and reasons for different results were elucidated. Considering the resulting conclusions comparable results could be achieved. Furthermore, possible factors influencing the bioavailability of folates from food were examined with a digestion simulation. As these factors, both the stability of the individual folates as well as the deconjugation were identified.
