With the powerful CABOLA methodology, the CAMOLA technique, the ADEQUATE and other 2D-NMR techniques it was possible to elucidate the complex structures of 15, so far partially unknown, reaction products of the Maillard reaction and to make their formation mechanisms probable. According to this, the precursor 3,4-didesoxyosone and the Strecker reaction played an important role during the formation of the isolated structures. The present study provided an important contribution for the complex chemical conversion reactions of carbohydrates and amino acids during the Maillard reaction.
