Test methods for the assessment of cleanability of process equipment are used in the food industry for years. The qualification of cleaning efficiency of total systems, however, is still not satisfactory. A new test method for the assessment of cleanability is developed in this paper. For this pipelines were soiled standardized with whey protein, then passed through by a cleaning fluid and at the end of the test section the dissolved protein is analyzed with a BCA protein assay. The specific cleaning rates are converted into the Sherwood numbers. Therefore, it was necessary to determine the diffusion coefficients of the soil. The Sherwood number of the mass transfer is now used as qualification criterion. Through this dimensionless number is a direct transfer of the statement to the cleanability of geometrically similar piping systems possible. Additionally it was recognized by the test runs that heat transfer equations from the literature can be used for this material system and therefore a prediction of hygienic design without any practical trials can occur.
