This thesis investigates the potential of innovative nonthermal food processing technologies including enzymatic hydrolysis, fermentation, high pressure assisted hydrolysis, pulsed ultraviolet light as well as gamma-irradiation and cold atmospheric pressure plasma for the production of low-allergen soybean-based food ingredients. As evidenced by SDS-PAGE, degree of hydrolysis as well as sandwich ELISA and western blot, all technologies investigated sufficiently reduce soy allergy while preserving the sensory and techno-functional characteristics of soy.

Die Arbeit untersucht den potentiellen Einsatz innovativer, nicht-thermischer Verfahren wie die enzymatische Hydrolyse, Fermentation, Hochdruck unterstütze Hydrolyse, gepulstes UV Licht sowie Gamma-Bestrahlung und Niedertemperatur Plasma für die Herstellung von niedrig-allergenen Soja-basierten Lebensmittelzutaten. Mittels SDS-PAGE, der Bestimmung des Hydrolysegrades sowie Sandwich ELISA und Western Blot konnte gezeigt werden, dass alle untersuchten Technologien die Allergenität von Soja unter Erhalt der sensorischen und techno-funktionellen Eigenschaften ausreichend reduziert haben.
