Photobacterium (

phosphoreum,
P. iliopiscarium and
P. carnosum have been found to be relevant spoilage bacteria on meat. This thesis presents a novel culture-independent LAMP assay for their detection, and reveals large intra- and inter-species diversity from comparative analysis at the physiological, genomic and proteomic levels. Combination of high oxygen concentration and carbon dioxide impair their growth in single culture, although the presence of concomitant bacteria on meat can alleviate this stress and allow their persistence on meat.
