Als Indikator der ausreichenden Pasteurisation hat sich die Restaktivität von Carbesterase bei den Erzeugnissen aus Fleisch von Schwein und Rind sehr gut bewährt. In vorliegender Arbeit wird in Modellversuchen und an Handelsprodukten u. a. geprüft, wie sich die Hitzebehandlung der Erzeugnisse in Abhängigkeit von Rezeptur, Vorbehandlung der Rezepturkomponenten und höheren Gehalten an mikrobieller Esterase auf die Esterase-Restaktivität auswirken und welche Restaktivitäten als Indiz einer potentiell unzureichenden Pasteurisation anzusehen sind. Der Esterasetest erweist sich auch bei Kochpökelware, Hackfleischprodukten sowie Brüh- und Leberwurst aus Putenfleisch als sehr gut geeignet.

To determine the adequacy of heat treatment of products made of meat of pig and cattle the residual activity of carbesterase proved very well. In this study among other things both in model tests and at commercial products the influence of recipe, heat treatment and higher contents of microbial esterase on residual esterase activity in turkey meat and products was investigated. To determine safe cooking endpoint temperatures different residual esterase activities are suggested. The esterase test proves very well with cured and heated products, chopping meat products as well as sausage and liver sausage from turkey meat.
