Weizenbiere können erhöhte Mengen des potentiell kanzerogenen Vinylbenzols (VB) enthalten, gebildet durch Decarboxylierung freier Zimtsäure im Malz. Die Anwendung des Sensomics Konzeptes ergab, dass VB nicht zum typischen Weißbieraroma beiträgt, jedoch 4-Vinylphenol (VP) und 2-Methoxy-4-vinylphenol (MVP), ebenfalls gebildet durch Decarboxylierung freier Phenolcarbonsäuren (PCS). Mit einer speziellen Brauhefe konnte gezeigt werden, dass diese Verbindungen hauptsächlich durch enzymatischen Abbau gebildet werden. Durch Beeinflussung der Freisetzung von PCS bei der Mälzung konnte der VB-Gehalt, unter Beibehaltung von VP und MVP, minimiert werden.
