By means of the Sensomics concept, the following key odorants were identified among respectively more than 20 aroma-active compounds: thymol (in thyme), carvacrol (in oregano) and linalool, myrcene and sabinene hydrate (in marjoram). Beside the aromatic effect, herbs are also used in medicine, but the mechanisms of action are rarely understood. The in-vitro determination of olfactory receptor-agonist-relationships revealed thymol and carvacrol as agonists of the olfactory receptor OR1A1 for the first time, which indicates postprandial effects of the odorants.
