Abstract:
Zur rheologischen Beschreibung der Maische als Suspension wurden Messmethoden entwickelt, die die Partikelgrößenverteilung, Partikelform und Partikelkonzentration sowie die Viskosität der kontinuierlichen Phase in Abhängigkeit von Temperatur, Feststoffkonzentration, Lösung des Malzes und Zeit erfassen. Die Messmethoden können Quellung, Desagglomeration, Verkleisterung und Lösungsprozesse während des Maischens quantifizieren. Sowohl die grob- als auch die feindisperse Suspensionsviskosität der Maische kann auf Grundlage der Einstein-Gleichung beschrieben werden.

A measuring system has been developed in order to measure the parameters required to characterise the rheological properties of the mash: viscosity and density of the continous phase, particle size distribution, particle concentration and particle shape of non-soluble particles during the mashing process. Swelling, disintegration gelatinisation and hydrolysis are measured. It can be shown that the viscosity dependency from solid volume fraction of starch can be described by the modified Einstein-equation for asymmetric particles (fine and coarse).
