Der chiral gebaute Bitterstoff Humulon liegt in natürlichem Hopfen in der (S)-Konfiguration vor. Es konnte allerdings gezeigt werden, dass Humulon nach der Ernte zu racemisieren beginnt. Künstlich racemisiertes (R/S)-(±)-Humulon bzw. daraus erhaltenes (±)-Isohumulon wurde mittels chiraler HPLC in seine Enantiomeren getrennt und diese sensorisch analysiert. Im zweiten Teil der Arbeit wurden unterschiedliche Bedingungen bei der Isomerisierung von Humulon zum Isohumulon untersucht. Außerdem wurden diverse Substanzen hinsichtlich ihrer katalytischen Wirkung bezüglich der Isomerisierung getestet. Hohe Ausbeuten und ein möglichst geringer trans-Isohumulon-Anteil waren hierbei in der Bewertung die entscheidenden Aspekte.

Man-made racemized (R/S )-(±)-humulone and herefrom received (±)-isohumulone were separated into their enantiomers by chiral HPLC. The enantiomers were studied sensorially, too. In the second part of the work different conditions during the isomerization of humulone to isohumulone were explored. Furthermore diverse substances were tested with regard to theirs catalytic effects referring to the isomerization. Here, a high yield and a low amount of trans-isohumulone were the critical aspects in the valuation.
