In natural hops the chiral bitter humulone is present in (S)-configuration. But it could be proved that humulone racemizes after harvest. Man-made racemized (R/S )-(±)-humulone and herefrom received (±)-isohumulone were separated into their enantiomers by chiral HPLC. The enantiomers were studied sensorially, too. In the second part of the work different conditions during the isomerization of humulone to isohumulone were explored. Furthermore diverse substances were tested with regard to theirs catalytic effects referring to the isomerization. Here, a high yield and a low amount of trans-isohumulone were the critical aspects in the valuation.
