The beneficial health effect of buckwheat (Fagopyrum esculentum Moench) is based on the containing bioactive compounds. In a breeding program interspecific crossings with high flavonoid contents were developed. Furthermore informations about the inheritance patterns of flavonoids were investigated. Besides the well known ingredients the following flavanols were described in buckwheat seeds for the first time: epiafzelechin-[4-->8]-epiafzelechin-[4-->8]-epicatechin, epiafzelechin-[4-->6]-epicatechin, epicatechin-[4-->8]-epicatechin-3-O-dimethylgallate, epiafzelechin-[4-->8]-epicatechin-3-O-dimethylgallate, epiafzelechin-[4-->8]-epiafzelechin-[4-->8]-epicatechin-3-O-3,4-dimethylgallate, epicatechin-[4-->8]-epiafzelechin-3-O-4-methylgallate und epicatechin-[4-->8]-epiafzelechin-benzoate.
