A technology to produce milk and egg white protein aerogels was established in order to create a carrier system for sensitive substances. The structure-function relationship between the precursor hydrogels and supercritically dried aerogels was assessed. The protein aerogels were tailored to feature a high loading capacity and structural stability. In-vitro digestion experiments confirmed that protein aerogels inherit all relevant properties to be considered as a carrier system with controlled release functionality in food, nutraceutical, pharmaceutical, or cosmetic applications.
