Shelf-stable whey concentrate is an energy saving alternative to whey powder. Up to now, whey powder is, however, the only storable form of whey, because standard protocols for preserving concentrated fluid whey do not exist yet. Therefore, the aim of this thesis was to systematically and comprehensively investigate the reaction kinetics of heat induced whey protein denaturation and spore inactivation in whey concentrates with varying dry matter and composition to facilitate the development of useful process options for their preservation.
