In the present thesis the potential of the carotenase AtCCD1 regarding its technical applicability for production of aroma compounds was investigated. In addition to enzyme expression in a bioreactor and subsequent refolding particular focus was put on the immobilization of the enzyme and the in situ recovery of the product β-ionone. Using affinity and inclusion methods it was feasible to immobilize the enzyme and successfully apply it in a lab scale production and recovery process.
