It is shown that premature spoilage of ESL milk is mainly induced by psychrotolerant spore-forming bacteria and post-pasteurization recontaminants. In bactofuged ESL milk a transmission of spores from raw milk to end products was observed. In microfiltered ESL milk, however, it only occurred in rare cases and was associated with elevated spore-counts. Especially recontamination within the plant increases the risk of spoilage. Additionally, a novel species and a novel genus belonging to the Paenibacillaceae were described.
