Dietary fiber (DF) are known to improve blood glucose tolerance. This thesis investigated the impact of DF properties on in vitro glucose release, whereby significant effects on glucose diffusion was shown, with hydration properties playing a crucial role. Furthermore, the effect of food processing on glucose release of DF-enriched foods was examined, revealing a complex interplay between starch digestibility, viscosity, and food matrix. However, the in vivo results for DF-enriched bakery products did not fully reflect the in vitro findings.
