It could be shown that foam separation is an efficient method for the enrichment of surface active as well as not foaming substances from aqueous extracts of spices and herbs. Different useful substance groups, such as antioxidants from rosmarinum, pungent principles from ginger, carotinoids from fruit juices, bitter principles from beer, and curcuminoids and tumerones from curcuma, could be enriched, and constituents with adverse effects, such as glycoalcaloids from potatoe juice and flavocavins from kava-kava roots, could be eliminated. The enrichment behavior during foam separation, depending on polarity and foam activity, differed not only between the various substance groups but also between homologues.
