Abstract:
This thesis highlights the potential of endolysin in combination with high hydrostatic pressure to eradicate Gram-positive pathogens in foods. This work demonstrates that endolysins can substantially enhance the bactericidal effect of high pressure and enable the inactivation of cells at milder pressure parameters. New insights into the mechanistic background of bacterial inactivation by the combination of these techniques are provided, the understanding of endolysin’s antimicrobial activity is deepened, and the role of the cell wall in high pressure resistance is highlighted.

Die vorliegende Arbeit beleuchtet das Potential von Endolysinen in Kombination mit hydrostatischem Hochdruck für die Inaktivierung von grampositiven Pathogenen in Lebensmitteln. Der Einsatz von Endolysinen erhöhte den antibakteriellen Effekt des Hochdruckverfahrens und ermöglichte die Abtötung von Zellen bei reduzierter Intensität der Hochdruckbehandlung. Darüber hinaus wurden grundlegende Erkenntnisse zum Wirkmechanismus der synergistischen Abtötung, einem vertieften Verständnis des antimikrobiellen Effekts von Endolysinen und der Rolle der Zellwand in Hochdruckresistenz erarbeitet.
