Pulsed light represents a rapid surface disinfection technology based on UV-light emitted by xenon lamps. In this thesis, the application of pulsed light for food surface disinfection was studied. At first, the most suitable way of fluence dosage was investigated in order to enable the highest possible microbicidal effect. Secondly, the impact of pulsed light on bacterial structures and functions was elucidated in order to clarify the microbicidal action of pulsed light. Finally, the achievable microbial reduction on the surface of selected fresh produce was determined.
