Abstract:
Im Zuge dieser Arbeit gelang die Identifizierung, Quantifizierung und funktionelle Charakterisierung geschmacksaktiver und geschmacksmodulierender Metabolite von Whisky mittels instrumentell-analytischer und humansensorischer Techniken. Die Identifizierung sortenspezifischer Markerverbindungen, Modellstudien sowie quantitative Analysen von Holzextrakten lieferten grundlegende Kenntnisse zum Einfluss des Herstellungsprozesses, insbesondere der Lagerung, auf die Schlüsselgeschmacksstoffe in Whisky.

Translated abstract:
In this work taste-active and taste-modulating metabolites of whisky have been successfully identified, quantified and functionally characterised using instrumental analysis and human sensory tools. Identification of varietal-specific marker compounds, model experiments as well as quantitative analysis of oak wood extracts provided fundamental knowledge about the influence of the manufacturing process, especially maturation, on key-tastants in whisky.
