Kurzfassung:
Durch Kombination von instrumentell-analytischen und humansensorischen Techniken gelang es das nicht-flüchtige Sensometabolom von Äpfeln und Apfelsaft zu entschlüsseln. Unter Zuhilfenahme chromatographischer (HPLC) und spektrometrischer/ spektroskopischer Methoden (LC-MS/MS, NMR) wurden Triterpencarbonsäuren als süß-modulierende Verbindungen identifiziert. Abschließend wurde eine Warenkorbanalyse durchgeführt sowie der Einfluss der Pasteurisierung und Filtration auf ausgewählte Schlüsselgeschmacksstoffe untersucht.

The combination of instrumental analytical techniques and human sensory tools enabled the characterization of the non-volatile sensometabolome of apples and apple juices. Using chromatographic (HPLC) and spectrometric/ spectroscopic methods (LC-MS/MS, NMR) triterpenic acids were identified as sweet-taste modulating compounds. Finally, a market-basket analysis was performed and the influence of pasteurization and filtration on selected key taste compounds was investigated.
