The presented work contributes to the optimisation of heating processes in the dairy industry by investigations using structural synthesis, based on the analysis of individual plant parts. Partial aspects of a mathematically based model were extended by application of fuzzy logic. The simulation tool was then applied to different plant configurations and process parameters. For evaluation of a modification both process and quality parameters were observed. The investigations showed that a lengthening of run time of approx. 20% can be realised. One of the tested modifications has already been implemented in a local dairy, resulting in an improved energy usage without provoking problems with respect to run time. For further improvement of the simulations tools performance, laboratory and pilot plant scale experiments are required.

Die vorgestellte Arbeit leistet einen Beitrag zur Optimierung von Erhitzungsprozessen in der Milchindustrie durch Untersuchungen anhand struktureller Synthese, aufbauend auf der Analyse individueller Anlagenteile. Teilaspekte eines mathematisch basierten Modells wurden durch die Anwendung von Fuzzy Logik erweitert. Das Simulationswerkzeug wurde dann auf unterschiedliche Anlagenkonfigurationen und Prozeßparameter angewandt. Zur Bewertung einer Modifikationen wurden sowohl Prozeß- als auch Qualitätsparameter verfolgt. Die Untersuchungen zeigten, daß sich eine Verlängerung der Betriebszeit in der Größenordnung bis 20% realisieren läßt. Eine der so erarbeiteten Modifikationen wurde bereits in einer örtlichen Molkerei implementiert und resultierte in einer verbesserten Energienutzung, ohne Beeinträchtigung der Betriebszeit. Um die Leistung des Simulationswerkzeuges weiter zu verbessern, erweisen sich allerdings Labor- und Pilotversuche als erforderlich.
