Applying an activity-guided fractionation, the naturally occurring bitter tastants in oat flour were located and their structure elucidated. The development of suitable quantitation techniques revealed a series of key taste compounds with a crucial impact on the sensory perception of oat. Results were verified by means of reconstitution and omission experiments, thus the contribution of single tastants was rated objectively for the first time.
