The growth of microbial contaminants in industrially produced beverages can cause significant quality and economic loss. In this work MALDI-TOF MS techniques were developed for the identification and differentiation of bacteria found in beverage and process samples. Besides offering fast routine identification for a wide range of organisms, MALDI-TOF MS proved to be capable to differentiate beer-spoilage bacteria of the same species into different ecotypes with regard to their spoilage potential.
