In verschiedenen biochemischen Modellsystemen wurden die antioxidativen Kapazitäten von Bier und Bierrohstoffen evaluiert, um Empfehlungen für die Entwicklung eines gesundheitsfördernden Bieres ableiten zu können. Neben den lipidperoxidationshemmenden und immunsuppressiv wirkenden Hopfeninhaltsstoffen stellte vor allem die Maische als effizienter Radikalscavenger und Kupferkomplexator einen geeigneten Kandidaten für eine weitere Anreicherung im Bier dar. Desweiteren wurde im Zuge dieser Versuche die physiologische Wirksamkeit von Bieren mit erhöhtem Stammwürze- bzw. Hopfengehalt in Form von Trinkstudien untersucht. Dabei zeichneten sich nach dem Bierkonsum neben Erhöhungen des antioxidativen Plasmapotentials auch immunsuppressive Eigenschaften als akuter Effekt in vivo ab. Moderater, aber regelmäßiger Bierkonsum resultierte in einem günstigeren LDL/HDL-Quotienten der Probanden. Eine weitere Humanstudie befaßte sich mit der Bioverfügbarkeit von Hydroxyzimtsäuren aus Weizenkleie-Zerealien. Nach dem Zerealienkonsum konnten erhöhte Ferulasäure- und Sinapinsäurekonzentrationen (als Konjugate) im Plasma bzw. Urin der Probanden identifiziert werden, die im Plasma einen Absorptionspeak zwischen 1 und 3 h aufwiesen. Außerdem wurde der präsystemische Metabolismus verschiedener Hydroxyzimtsäuren (Ferula-, Sinapin-, p-Cumar- und Kaffeesäure) und ihrer Methylester an Caco-2 Zellen als Dünndarm-Modell untersucht. Neben einer Esterase-Aktivität gegenüber den Methylestern konnten Sulfate und Glucuronide als Metaboliten im Zellmedium identifiziert werden.

The antioxidative capacity of beer and beer ingredients were evaluated in different biochemical test systems to enable recommodations for the development of a health promoting beer. In addition to the hop substances which inhibited lipidperoxidation and acted immunosuppressively wort presented itself to be an appropriate candidate for a further accumulation in beer due to the efficient effect as radical scavenger and the capacity for copper complexation. In the course of these tests the physiological activity of beer enriched with wort and hops was investigated in terms of human studies. An increased plasma antioxidant potential and immunosuppressive abilities as an acute intake effect of the administered beer were shown in vivo. Moderate but regular beer consumption resulted in a more favourable LDL/HDL ratio of the probands. Another human study dealt with the bioavailability of hydroxycinnamates from high bran cereal. After cereal consumption increased ferulic and sinapic acid (conjugate) concentrations were identified in human plasma and urine showing an absorption peak between 1 and 3 h in plasma. Furthermore, the presystemic metabolism of dietary hydroxycinnamates (ferulic, sinapic, p-cumaric and caffeic acid) and their methyl derivatives was investigated with Caco-2 cells as a small intestine model.
