The effect of the initial molecular weight, the degree of denaturation, the transglutaminase- and UV-induced crosslinking on interaction-property relationships of whey protein-based films and coatings was investigated. The reduction of the initial molecular weight and the degree of denaturation leads to reduced crosslinking but more flexible films and coatings.
