The combined effect of fat and aqueous phase parameters NaCl, sucrose, pH and protein on the high pressure inactivation of
Lactobacillus plantarum was assessed in oil-in-water emulsions. Rapeseed oil caused sporadic matrix- and strain-specific changes in inactivation efficiency. Preconditioning by contact with rapeseed oil, oleic acid or Tween 80 reduced high pressure inactivation. Tween 80 decreased fatty acid biosynthesis, enhanced growth, changed the cellular fatty acid profile, and alleviated the HHP induced loss of metabolic activity and membrane integrity.
