Strawberries are rich in many valuable ingredients, including polyphenols as secondary metabolites, but also allergenic Fra a 1-proteins. Using a crossbreeding population, different polyphenols were evaluated by LC-MSn and Fra a 1-concentrations were determined via indirect competitive ELISA. By bioinformatic analysis, the influence of genotype (G) and environment (E) on individual metabolites was determined. The results of this work provide guidance to the interaction of G and E and underline the importance of field trials for the breeding of new strawberry varieties.
