Firmness is one of the most important quality criteria of apple fruit, both for the marketing supply chain as well as for the end consumer. Methods to maintain fruit quality aim to manipulate ripening related processes in the fruit and thereby, among other parameters, to maintain firmness. Fruit softening during storage is mainly related to the degradation of cell wall polysaccharides and to the loss of the polymeric network structure of the cell wall. This work aimed to investigate changes in firmness together with the degradation of the cell wall structure during apple storage. The experimental focus was directed to the role of ethylene as a regulator of ripening related changes in fruit texture and the control of these processes by modern storage techniques.
