Lately, consumers critical examine not only the quality of food but the processes of food production, too. Therefore, also the meat processing enterprises are in need of professional risk management that is essential for the optimization of production processes, food quality and food safety. This work develops a concept for the systematic controlling of operational risks in slaughterhouses and meat processing enterprises. The concept is based on an analysis of the risks during the processes of slaughtering of pigs and cattle as well as the operations of meat processing. Additionally, the concept is influenced by the results of a qualitative survey regarding the status quo of the application of risk management in enterprises of the meat industry.
