Psychrotolerant pseudomonads can secrete the heat-stable AprX peptidase in raw milk and thus affect the quality of UHT milk. Using 129 Pseudomonas strains, the correlation of genetic organization of the aprX-lipA2 operon and proteolytic activity was investigated. The regulatory influence of temperature, growth phase, and different operon genes on AprX biosynthesis was analyzed. A multiplex qPCR assay for quantification and differentiation based on proteolytic activity of Pseudomonas species in raw milk was developed.
