Even though the addition of hops primarily affects the bitterness of beer, the different hop varieties also add specific flavours to beer. Within the scope of this study, the flavour characteristics of five different varieties of hops were compared by means of the molecular sensory concept. Thereby 4-methyl-4-sulfanyl-2-pentanone with its typical baccate smell was detected for the first time in Yakima Cascade as key odorant of this variety. Quantitative measurements on the base of stable isotop assays showed the highest amount of linalool in Golding variety whereas the comparatively highest amounts of geraniol were quantified in Yakima Cascade. In both hop varieties, both alcohols existed also in glycosidically bound shape.
