The incorporation of additives into sausage is a promising matrix to improve the folic acid intake of certain populations. Therefore, a summer sausage fortified with folic acid (Folsami) was developed and in a subsequent clinical study of 166 individuals, the effects of a moderate consumption of “Folsami” on blood parameters and other criteria over a period of 6 and 3 weeks were investigated. Regular Folsami intake induced a significant increase in folate concentrations as well as significant reductions in homocysteine concentrations in their blood. A depoteffect has not been observed.
