In this thesis, the impact of coffee beverages prepared from differentially steamed coffee beans and constituents thereof on the mechanisms of gastric acid secretion was examined by analytical measurements of the serectory activity, parameters of signal transduction and the expression of gastric acid secretion related genes in human stomach cells. In addition, the decrease of the intragastric pH after consumption of coffee was analysed in a human intervention study. It was shown that only a coffee beverage made from intensively steamed coffee beans impairs gastric secretion significantly. From a mechanistic view, N-methylpyridinium was identified as anti-secretory coffee constituent at a functional and regulatory level.
