Bei der thermischen Behandlung von Lebensmitteln werden die Seitenketten von Proteinen z.T. durch reduzierende Kohlenhydrate posttranslational modifiziert. Neben Temperatur und pH-Wert kann dabei auch hoher hydrostatischer Druck (HHD; 6000 bar) die Bildung dieser Modifikationen beeinflussen. HHD wird als neue Methode zur Inhibierung des Wachstums von Mikroorganismen bei der Lebensmittelkonservierung genutzt. Die Ergebnisse der Dissertation zeigten, dass unter HHD die Konzentrationen an N-epsilon-Carboxymethyllysin (CML), Glyoxal-Lysin Dimer (GOLD) und Methylglyoxal-Lysin Dimer (MOLD) durch Druckbehandlung abnahmen, wohingegen N-epsilon-Carboxyethyllysin (CEL) deutlich zunahm. Markierungsversuche mit unterschiedlich 13C-markierter Glucose zeigten, dass unter HHD z.T. andere Mechanismen zur Bildung der Lysinmodifikationen ablaufen, wobei die Bildung der Kohlenhydrat-Abbauprodukte Glyoxal und 2-Oxopropanal eine wichtige Rolle spielt.
