- Abstract:
- This dissertation consists of three essays that contribute to the scientific literature on sustainable consumer behaviour based on three empirical studies. Essay I explores food traceability and shows that consumers without contact with agriculture and local food buyers value such traceability systems. Essay II explores the transparency of food origin and information sources. Essay III explores leveraging local food origin as a strategy to reduce food waste in the retail sector.
