Zur quantitativen positionsspezifischen Bestimmung posttranslational glykomodifizierter Lysin- und Argininreste in hochdruck- und temperaturbehandeltem β-Casein A2 wurde eine LC-MS-Stabilisotopenverdünnungsanalyse entwickelt. Als interne Standards wurden erstmals synthetische, mit stabilen Isotopen markierte Fructoselysin-, Carboxymethyllysin- und MG-H1-modifizierte Peptide eingesetzt. Diese Methode erlaubt es, das Ausmaß der Glyko-Modifizierung einzelner Lysin- und Argininreste in Lebensmittelproteinen bei Verarbeitungsprozessen miteinander zu vergleichen. Im Vergleich zur Verwendung interner Standards aus nicht glykomodifizierten Peptiden liefert die neue Methode höhere Konzentrationen an modifizierten Lysin- und Argininresten.
