A stable isotope dilution assay (SIDA) for the determination of the Fusarium mycotoxins enniatins (ENNs) A, A1, B, B1 and beauvericin (BEA) was developed.
Sixty-five cereals and related food samples from Germany, and 60 Chinese medicinal herb samples were analyzed by SIDA for contamination of ENNs and BEA.
The fate of ENNs and BEA during beer making was followed by SIDA, showing low carry over of these mycotoxins from barley to beer.
The effect of sourdough processing and baking on ENNs and BEA was studied by SIDA, which revealed that they were reduced partly from the starting materials.
