Bei der Ausbildung des typischen Rohwurstcharakters (Geruch, Geschmack, Konsistenz, Farbe, Schnittfestigkeit, u.a.) spielen endogene Fleischenzyme sowie die zugesetzten Starterkulturen eine entscheidende Rolle. Dabei ist der Metabolismus von Peptiden und Aminosäuren von besonderer Bedeutung, sowohl hinsichtlich der Aromabildung als auch der Qualität der Rohwurst, da die Bildung toxikologisch bedenklicher biogener Amine und sensorisch bedeutsamer Substanzen aus denselben Vorstufen erfolgt. Die wichtigsten biogenen Amine wurden durch die Entwicklung einer LC-MS/MS-Methode analytisch erfasst. Anhand des Konzepts der molekularen Sensorik wurden die für das Aroma von Rohwurst verantwortlichen Verbindungen identifiziert und mittels Stabilisotopenverdünnungsanalysen quantifiziert. Der Einsatz verschiedener Starterkulturen der Spezies Lactobacillus sakei bei der Rohwurst-Reifung zeigte, dass einige Stämme in der Lage sind, den Amin-Gehalt zu reduzieren, das Gesamtaroma der Rohwurst wurde dadurch nur geringfügig beeinflusst.
